An espresso of a special kind
It grows at an altitude of 1,500 metres - the Honduras Finca Oropendula Espresso! With its Catuai, Bourbon and Lempira varieties as well as the "anaerobic honey" preparation, this unique espresso gains in quality:
Thanks to the anaerobic (i.e. airtight) fermentation of the beans, both the consistency and the profile of this espresso have been improved over the past three years! The beans ferment for 36 hours: "Due to the density of the coffee, we increased the weight and achieved a good result. We reduced the coffee-water ratio to bring out the body better, and lengthened the seconds to avoid under-extraction."
This experimental drive by the roast master has helped the espresso to develop its very special character! In the process, it captivates with notes of red apple, plum and vanilla.
