Under-extracted espresso

Under-extraction is when the espresso tastes too sour. In this case, the coffee powder and water are not sufficiently fused together. As a result, too few ingredients and aromas are released from the coffee grounds, leading to an acidic and watery taste. There are many reasons for under-extraction: too little coffee powder, water that is too cold, too coarse a grind, and so on. Grinding degree as well as a too short brewing time are possible causes.
