Extraction time

In the extraction timeIf the extraction time is too long, the water dissolves the aromas and flavors from the coffee beans. If the throughput time is too long, over-extraction takes place and the coffee tastes unpleasantly bitter. If the extraction time is too short, under-extraction occurs and the coffee acquires a sour taste. The optimum extraction time should therefore be 25 to 30 seconds.
