The right coffee for portafilter machines:The path to the perfect espresso
Different paths lead to Rome, and different preparation methods lead to different coffee drinks. But today we're talking about preparation with a portafilter machine, and we're asking ourselves which espresso powder is best suited for this.
Manual precision for the perfect espresso
The portafilter machine is particularly popular among espresso drinkers. But why? The answer lies in the precision that a portafilter machine allows when preparing espresso. The more settings that can be adjusted manually on a portafilter machine, the more precise the result of your perfect espresso will be.
The following settings are beneficial for a portafilter machine:
brewing temperature
- Only adjustable on machines with PID control
- The lower the temperature, the more acidity
- The higher, the more bitter
brewing pressure
- The standard is approximately 9 bar.
- Pressure adjustment via an OPV (overpressure valve), PID system, or manual pressure profiles.
Extraction time
- Some machines stop automatically, others only manually via buttons/levers.
- Individual taste experience thanks to manual extraction time
Puck Prep: The Be-All and End-All for Portafilter Machines
Whether the extraction is perfect can be determined primarily with bottomless portafilters , as they do not forgive any mistakes. Even small errors lead to visible channeling with bottomless portafilters. This makes it easy to see whether the settings for flow time, temperature, and water pressure are correct and whether the tamping has worked or needs to be improved. This level of control can only be achieved with a portafilter machine .
So you can imagine: it's not just the choice of espresso beans affects the taste of the drink, but the preparation and correct use of your portafilter machine also determine the result. Because we can use the finest coffee powder available, but if the puck preparation is not right, even the best espresso powder in the world will not taste good.
The choice of coffee bean and the machine parameters are closely interrelated. Each type of bean—depending on its roast level, origin, and freshness—requires individual adjustments to the brewing temperature, brewing pressure, and extraction time in order to develop its full aroma potential.
For example, lighter roasts often require a higher brewing temperature and a finer grind, while darker roasts are better suited to lower temperatures and shorter extraction times.
When buying espresso beans, you should therefore pay attention to the flavor notes and, depending on your preference, go for a chocolatey, floral, sour, or spicy flavor. After buying a new variety, it may take a few espresso shots to find the right settings to get the maximum flavor experience from the beans.
Finely ground coffee for portafilter machines
But it's not just the flavor that matters. The grind size also determines whether or not ground coffee is suitable for a portafilter machine.
In supermarkets, the powder is often intended for filter coffee and is therefore not fine enough. When used for espresso, this coarse-grained coffee would ultimately lead to channeling, rendering the drink undrinkable.
Your own espresso grinder for the perfect grind
If you have your own grinder, you have virtually unlimited freedom. This is because you can produce your own finely ground espresso powder from almost any bean. However, it should be noted that not every bean is ideal for espresso.
Robusta, for example, should only be purchased from high-quality suppliers. Cheap Robusta beans often result in a musty, musky taste.
Artificially flavored beans should also not be used in expensive portafilter machines. The synthetic flavoring oils can clog the brew group, contaminate the grinder, and damage the portafilter machine in the long run. We generally advise against using flavored beans, as this is not what coffee enjoyment is all about. True coffee lovers know that coffee is one of the most aromatic natural products alongside cocoa. If you know your favorite flavors, you can choose your coffee so that it naturally contains those flavors.
There are also two types that are suitable for portafilter machines, but can only be brewed into a well-rounded espresso by true professionals. We are talking about light roasts or naturals, for example. Light roasts require an extremely high brewing temperature, a very fine grind, and a long extraction time. Naturals are also only suitable for advanced users, because if they are processed and stored incorrectly, the beans can ferment and later you no longer know whether you are drinking espresso or wine.
