- Carefully fold the egg white mixture into the mascarpone mixture – preferably in small stages bit by bit. From this step onwards, do not use a hand mixer, but use a dough scraper (spatula).

- Soaked sponge cake as the first layer in a baking dish , then add a layer cream.
- Repeat the layering Repeat the layering process until the cream is used up – the last layer should be cream.

Preparation
- Preparing matcha: Mix 3 g of matcha with 40-50 ml of water at around 70 °C, then leave to cool.Tip: First mix the matcha with half of the water to form a smooth paste so that it blends evenly and can "bloom." Then stir in the remaining water. A chasen (bamboo whisk). You can find this in our 4-piece Matcha Premium Set.
- Pour the prepared matcha into a deep plate.
- The cream is prepared in exactly the same way as for classic tiramisu. The difference is that in this recipe, the ladyfingers are briefly dipped in cold matcha instead of espresso.
- The layering system is also the same. Start with a layer of soaked sponge cake, followed by a layer of cream. Repeat this process until the last of the cream covers everything.
- Chill for approx. 4 hours (preferably overnight) and sprinkle with matcha powder just before serving.
